Foodie Friday: 2 Ingredient Paleo Pancakes

Is there an award for the worst food photographer? Because if there is, someone nominate me!  Whilst not the best pictures, rest assured that these paleo pancakes taste AMAZING.

No wheat, no gluten, no sugar – perfectly healthy and done in a flash too! 

I’m gearing more towards meals that take less and use less lately so these are perfect. They’re also a good weekend treat when you don’t want to ruin your healthy eating streak but fancy something a little different.

So it’s really simple you need 1 banana and 1 egg. 

You can either whack them in your NutriBullet (like I did) or just mash the banana up and then whisk in with your egg. Either way, works great. Its up to you but if you’re not following a strict gluten free or paleo diet you can add a bit of baking powder so they rise a little.

Then add a teaspoon of coconut oil to your pan, they can easily get burned so just keep an eye on them but you need to cook them on a medium heat for around 5 minutes (although this depends on the size and thickness of your pancake, obviously).

And cook on a medium heat.

And that’s it – you’re done.

A fast, healthy treat.

  1. I’ve made these a couple of times now, the first time I loved them and the second they were awful! I think it was due to the banana been far too ripe but it has really put me off making them in future x
