Thanks to Slim Paley for alerting me that it is indeed National Watermelon Day today!
Which is good news for me as watermelon has been on of my staples this week. Since I don’t have a kitchen yet (luckily, I have a toaster, microwave and grill so I’m not having to live on takeways) salads have been top of the menu for dinner almost every night.
So, in the spirt of National Watermelon Day I thought I’d share one of my favourite salads…
Watermelon & Feta Salad
All you need is:
• 180g feta, crumbled
• A bunch of mint, leaves only, any larger leaves torn
• 500g watermelon flesh, cut into chunks
• 1 small red onion, finely sliced
• Extra-virgin olive oil
Just combine all the ingredients in a bowl and serve with some freshly ground black pepper!

I love watermelon! It’s one of my favourites especially on holiday…it goes rather well in gin too 🙂
I love these special days! I check it quite regularly for inspiration what to write about…did you know there’s a peanut butter cookie day? Never eaten a peanut butter cookie so was pretty impressed they had their own day dedicated to them. Your recipe for watermelon salad looks lush and much more up my street. I’ve just noticed someone has recommended gin as an accompaniment … now that really IS more me. Cheers! Andrea
Rachael: This might be one of the best “You had me at hello” posts I have seen, simply because of the picture. Watermelon AND feta. Would never have thought of that combination although I have always loved each separately, provided the feta did not overwhelm the dish it participated in. I wonder if a few crumbled walnuts would add to, or detract from, the flavor? But the best part of all, I can do it!!!! This is now on my “secret survival” list for when my wife goes off to England and I have to cater for myself. Thank You, Thank YOU, THANK YOU. prp
