Flourless Chocolate Brownies – With Courgettes

Whilst I’m having a little break in the beautiful Croatian island of Brac, I’m sharing some old posts. Here’s one of my favourite recipes – enjoy X

Flourless chocolate brownies – with courgette – sounds a bit strange right? But they are REALLY delicious. Also great if you’re following a paleo style diet and once you’ve made the almond butter very easy to throw together.

Ingredients:

140g almond butter {see HERE for how to make}
1 small courgette
65g Rice malt syrup (or sweetener of your choice)
1 tsp vanilla essence
1 tsp baking powder
Some grated nutmeg
100g good quality dark chocolate
1 egg

Directions…

β€’ Peel and slice the courgette – you need the courgette in VERY small pieces.
β€’ Melt the chocolate.

Next place ALL the ingredients in a bowl and mix.

Grease a brownie tin. Pour in the mixture. Cook on gas mark 4 (about 350 degrees) for 35-40 minutes and voila flourless, courgette brownies.

Surprisingly they are sweet enough so that you don’t really notice the difference between these and “regular” brownies.

    1. Β @Deborah LeeΒ Yeah Chris is obsessed with “not liking” courgette. I don’t know how you couldn’t, they don’t exactly taste of much. You really don’t know there’s courgette in them, if you don’t show them what goes in they’ll never, ever know!

  1. Great recipe. I love courgette and lemon drizzle cake, it’s one of my favourites. I usually save beetroot for brownies.

  2. The combination of chocolate and zucchini sounds a bit strange indeed, but I think I’ll like this. The almond butter sounds good too.

  3. Wow I’d heard of beetroot brownies but never courgette! How did you get the courgette to be sliced up that small? Not sure I could do that with a knife :/ Also I recently went to Brac and it was amazing!!! Hope you’re having a great time πŸ˜€

  4. My friend is obsessed with courgette cake and I have always found the idea strange. She says it adds moisture. Will have to try it.

  5. These look amazing! Will defintiely have to try them sometime although Im not keen on courgettes I’m sure the chocolate would hide the flavour. Hope you’re having a nice holiday x
