If you’ve ever been to Cuba then you’ll know how good authentic mojito’s are, but there’s no reason why you can’t bring Cuba to you!

Earnest Hemingway (again,if you’ve been to Havana you’re bound to have been to Bodeguita del medio bar) was a huge fan of the simple mojito but he preferred to exchange his soda water for champagne…unfortunately I’m living on a lemonade budget so it’s just plain ol’ mojito’s around here.

Rachael’s Mojito Recipe…

A few mint leaves
Lemon
Lime
1tsp sugar
White Rum
Sparkling Water
Ice

In a tall glass place a few mint leaves, 1tsp of sugar and a squeeze of lemon juice. Get a long spoon and just mix the mint and juice around, it’ll release the oils from the leaves so you have a real minty drink. The add a shot of white rum, add some ice cubes, juice from 1/2 a lime and top up the glass with sparking water. Give it a good stir to infuse the flavours and serve.
