I’ve been reading about the resurgence of veal for quite a while. It’s always been a meat I’ve avoided due to the publicity surrounding how the animals are treated. However, Sainsbury have a range of “Freedom Foods” which means that any veal they sell has been reared by farmers in a dedicated veal development group where the calves are house in open, straw-bedded barns and fed on a diet of milk, water and fibre.
Slow Roasted Veal
I slow cooked this shoulder of veal and as I didn’t want to mask the taste of the meat too much I kept it simple with just garlic and olive oil.
What you need:
- Sainsbury Veal Shoulder
- 5 cloves of garlic (whole and peeled)
- Himalayan Pink Salt
- 2tbsp Olive Oil
How to cook it:
- Preheat the oven to gas mark 5.
- Place the veal on some foil and rub the joint with some salt. Place the garlic cloves under the twine. Drizzle some olive oil over and place in the over.
- Cook in the oven for around one hour. After an hour wrap in foil and place back into the oven at gas mark 3 for a further 2.5 hours (longer if you don’t like your meat medium/rare).
Cheesy, asparagus potatoes
What you need (enough to feed 3/4 people):
- 1lb of Potatoes (I used taste the difference jersey royals)
- 2 Cloves of Garlic
- Asparagus
- 250ml of double cream
- 250ml milk
- 50g cheese (I used gruyere cheese)
- Salt
- Cheese
What to do:
- Preheat the oven to gas mark 6
- Mix the milk, cream, garlic and cheese in to a saucepan and bring to simmer.
- Add the potatoes in to the sauce and leave for around 3-4 mins to soften.
- Stir in the asparagus .
- Using a slotted spoon place the potato and asparagus in an overproof dish. Pour over the remaining sauce and cook for around 20-30 minutes.
