I love peanut butter – always have. So when it comes to making a guilt free treat for the lead up to Christmas then there’s only one thing for it. Chocolate Peanut Butter Fudge. Note that the chocolate coating is actually optional but I find it takes the edge off the peanut butter a bit and makes it way more decadent. They also make pretty good christmas gifts too.
The other great thing about this recipe is that it’s only 3 ingredients and it’s STUPIDLY simple. I tend not use the sweeter in mine as I like the saltiness of the peanut butter with the contrast of the dark chocolate but if you fancy it a bit sweeter then you can add some stevia.
What you need:
2/3 cup of peanut butter (you can use any nut butter you fancy)
1/2 cup almond flour
1tbsp stevia *optional
1/2 cup of At least 80% dark chocolate (raw dark chocolate is the best)
Method:
Remember I said this was REALLY easy? Well, just combine the peanut butter, almond flour and stevia together to form a dough. It needs to be pretty stiff so if it’s not then add some more flour.
Next you need to make little balls with the peanut butter mixture, once you’ve done this then place them in the fridge for at least an hour.
When your fudge is adequately chilled, melt your chocolate and using a tooth pick dip your peanut butter balls in the chocolate. Place on some grease proof paper and place back in the fridge to set. And voila, you’re done.
